½ cup grated carrots
½ cup pea pods
2 tsp curry powder
½ cup crushed no-salt-added tomatoes (not drained)
½ cup canned garbanzo beans, rinsed and drained
1 Tbsp raisins
1 green onion, chopped
Dash of salt
In a medium saucepan, cook cauliflower, carrots, pea pods, curry powder, tomatoes, garbanzo beans, and raisins, covered, for 10-12 minutes (stirring occasionally). Top with green onions and a dash of salt.
